Tips to Make This Easy Tortilla Roll Up Sandwich
- If you are making this awesome pinwheel sandwich for yourself, or if your little one likes a little more heat in their sandwiches, you can swap the Colby Jack cheese with pepper jack cheese.
- I finished off my easy lunchbox idea with a handful of blueberries, a mandarin orange and some cherry tomatoes with hummus for dip. It’s a really balanced combination, but also exactly what my little one loves.
- No way your child is putting this type of roll-up sandwich in their belly? Yeah, we went through a stage of that, too. The trick is that Ranch mix that’s included and well, we all know they love that stuff!

Turkey Ranch Pinwheels Recipe
This is such an easy recipe for a fun twist on the "norm". This rainbow pinwheels lunchbox idea is one of my personal favorites for this school year!
Ingredients
- 4 large spinach wraps
- 8 ounces cream cheese, softened
- 1 tablespoon dry ranch powder
- 1/2 cup red bell pepper strips, thinly sliced
- 1/2 cup orange bell pepper strips, thinly sliced
- 1/2 cup yellow bell pepper strips, thinly sliced
- 1 cup shredded colby jack cheese
- 1/2 cup spinach leaves
- 1/2 cup purple cabbage, thinly shredded
- 8 slices oven roasted deli turkey
Instructions
- Cream together the cream cheese and dry ranch powder mix until the ranch is well incorporated.
- Spread about 1/4 of the ranch/cheese mixture over each spinach wrap, leaving about 1/2 inch un-covered around the edge.
- Place the remaining ingredients over the top of the cream cheese in this order: red bell pepper, orange bell pepper, yellow bell pepper, colby jack cheese, turkey, spinach, and red cabbage.
- Tightly roll each tortilla and wrap each one in plastic wrap. Chill the rolls until ready to slice. Slice each of the rolls into 1 inch pinwheels and place in the lunch box.
