Here at Ruffles and Rain Boots, I love easy recipes. It was unseasonably hot and I decided to whip up one of my favorite crowd-pleasing recipes which is basically anything wrapped in a flour tortilla.

This simple pinwheel recipe will make a great way to put a lunch or dinner on the table in a snap and you probably have everything you need already. Raid the fridge and let’s get started.

  • To make these keto or low-carb friendly, use a low-carb tortilla wrap or a veggie wrap. Add green leaf lettuce to make it more of a grown up lunch.

Bacon Ranch Pinwheels

This bacon ranch pinwheel recipe can be prepared in a few minutes and will be loved by all! To ensure the pinwheels keep their shape, let it chill or use small picks and serve immediately.

Prep Time 10 minutes
Cook Time 15 minutes
Additional Time 2 hours
Total Time 2 hours 25 minutes

Ingredients

  • 1 pound of cooked and cut up bacon
  • 4 large flour tortillas
  • 8 ounces of softened cream cheese
  • 8 ounces of shredded cheddar cheese
  • 1 ounce package of dry ranch seasoning

Instructions

  1. Cut the bacon into small pieces and cook in a skillet over medium heat until cooked through. Put the bacon on a paper towel lined plate and blot any excess grease.
  2. Mix the cream cheese and ranch seasoning in a bowl.
  3. Lay out a tortilla and spread 1/4 of the cream cheese mixture on it, 2 ounces of cheese, and 1/4 of the bacon.
  4. Roll the tortilla up and place it on a baking sheet. Repeat for remaining tortillas.
  5. Place the rolled tortillas in the fridge for up to 2 hours and then cut into 2 inch sections. See notes to make and serve immediately. Notes

- You may substitute pre-cooked bacon (prepare per package instructions).

- I used cheddar cheese but a Mexican blend tastes great, too.

- Add torn (not shredded) lettuce before rolling to add a healthy crunch.

- To prepare and serve immediately, place picks in each section of the roll before cutting. Serve with picks in place.
