  • I won’t lie to you, you’re going to want to buy some premade chocolate covered cherries. I’ve tried to make them myself before and they just aren’t as fabulous. So, go with premade for the yummy.
  • Sure, you can make a cream cheese frosting. But the best, most light and fluffy frosting you can pipe with a piping bag is this awesome homemade buttercream in this recipe, with confectioners sugar and all the yummy.
  • Always always always let your cupcakes cool to room temperature before you frost them because warm frosting is no fun.

Chocolate Covered Cherry Cupcakes

If you love a good decadent cupcake, these chocolate covered cherry cupcakes make for a romantic adventure with your tongue. Oh, that sounds terrible--but it's so true!

Prep Time 10 minutes
Cook Time 20 minutes
Additional Time 15 minutes
Total Time 45 minutes

Ingredients

  • 12 Chocolate Cupcakes
  • 1 Package of Chocolate Covered Cherries
  • 1 jar Maraschino Cherries

Frosting

  • 2 sticks of unsalted butter (room temperature)
  • 4 - 5 cups of powdered sugar (Start with 4 cups)
  • 1 cup of cocoa powder
  • 1 Tablespoon of heavy cream (more if needed)
  • 4 Tablespoons of Maraschino Cherry juice
  • 1 teaspoon vanilla
  • pinch of salt

Instructions

  1. Bake your chocolate cupcakes as per the recipe directions.
  2. When the cupcakes are baked, remove them to wire racks to cool completely. 
  3. Using a cupcake corer or a large decorating tip, create a well in the center of the cupcake but DO NOT DISCARD THE CENTERS.
  4. Place a chocolate covered cherry in the center of each cupcake, and then replace each cupcake center on top.
  5. Cream the butter in a mixer until light and fluffy. 
  6. Add the cream, and blend until fluffy again. 
  7. Mix in the cocoa powder, pinch of salt, half the cherry juice, then half of the powdered sugar and finally the vanilla, blending between each ingredient. 
  8. Add the rest of the powdered sugar and cherry juice, mixing together until well combined.
  9. If frosting is too thick, thin with a little more Cherry Juice, or cream; alternately adding in additional powdered sugar if the frosting is too thin for you.
  10. Place frosting in a decorating bag, and swirl onto cupcakes.
