Here at Ruffles and Rain Boots, we have a bit of an obsession with cupcakes and Disney. Sometimes, those two things collide. This time? A quick and small batch of Daisy Duck cupcakes that feature an adorable little daisy I want to bite!

Tips to Make Daisy Cupcakes

  • No matter what, I usually start every cupcake ever with my favorite Lazy Girl Cupcakes. They’re a seriously no-fail cupcake recipe I can make without messing it up. If you have a favorite recipe for cupcakes, use that. Or if you have a favorite cake mix, use that. They’re your cupcakes and I want you to love them.
  • Try so very hard to not overfill your cupcake liners. Not only will it ruin the look, but you’ll get some crispy edges that are prone to burning. Also, I don’t like crispy edged cupcakes.
  • In case you’re not comfortable using fondant for the Mickey ears, you can use mini OREO cookies dipped in white chocolate. They won’t look exactly like my cupcakes, but I get it that dealing with fondant is a little more intimidating than dipping an OREO in chocolate, let’s be honest.
  • If you do go with fondant for your Mickey ears and bows, be sure to let them sit overnight on the counter to dry out. They will be a lot less likely not to flop over and be all bendy. And they’ll taste just as yummy.

Make Daisy Duck Cupcakes

Daisy Duck Cupcakes

These Daisy Duck cupcakes are so easy to make, I could whip up a batch in my sleep! Also, they're really yummy smelling, so I think sleep would elude me. Ha!

Cook Time 25 minutes
Additional Time 20 minutes
Total Time 55 minutes

Ingredients

Fondant Ears and bow

  • 1 package of white fondant
  • 1 package of purple fondant
  • 1 package of yellow fondant

Vanilla Frosting

  • 1 1/2 C unsalted sweet cream butter, softened
  • 3 C powdered sugar
  • 3-4 tbsp heavy whipping cream
  • 1 tsp vanilla extract

Instructions

  1. To make the fondant elements, dust your cutting board with powdered sugar and roll out the white fondant to 1/4 inch thickness and cut out 24 circles for the ears and set aside.
  2. Using your leftover bits, use a small and medium daisy fondant plunger to cut out 12 each of the floral pieces. Set aside.
  3. Mold a tiny bit of the yellow fondant into a nerd candy sized ball and set aside.
  4. Wet your finger with water and gently dab it onto the center back of one of the smaller daisy fondant pieces. Place this dampened daisy fondant piece into the center of one of the bigger daisy fondant pieces.
  5. Wet your finger with water then gently dab it onto the yellow ball on one side and place into the center of each daisy.
  6. Wet your finger and dab it gently onto the side of one of the circles then place the daisy on top of the ear on the wet spot. Set aside.
  7. Mold a piece of purple fondant into a teaspoon-sized ball. Press this small bit of fondant into the larger bow size mold and make 12 bows.
  8. Allow all of the fondant elements to dry for a few hours (or even overnight.
  9. Make your cupcakes and allow them to cool completely before decorating.
  10. Mix together the butter, powdered sugar, heavy whipping cream, vanilla, until combined and the mixture is smooth. Place the frosting into your piping bag and frost the cooled cupcakes as desired.
  11. Place a purple bow in the middle of the piled frosting, then place the ears on either side of the bow. Then enjoy!
