  • When working with fondant, be sure the room is nice and cool or the fondant could be a sticky mess.
  • If you are working with a large amount of fondant, it is recommended you use a fondant roller and roll small sections at a time before combining.
  • For a lower-fat cupcake, replace the oil with applesauce (there will be a slight texture change).

Ingredients for These Fun Christmas Cupcakes

This Disney Christmas idea is honestly pretty easy to make. The fondant bows can be found pre-made, so if you don’t have (or want) a mold, look for those and skip that step. And if you want to make Mickey Mouse cupcakes, just leave off the bow!

Note: if you have a cake mix on hand, follow this recipe for cake mix cupcakes.

  • Red fondant
  • Flour
  • Sugar
  • Dark cocoa
  • Baking soda
  • Baking powder
  • Canola or vegetable oil
  • Light brown sugar
  • Vanilla extract
  • Egg
  • Buttermilk
  • Salt

Ingredients for a Yummy and Easy Frosting

  • Butter
  • Powdered sugar
  • Vanilla extract
  • Heavy whipping cream
  • Red and green gel food coloring
  • Ghirardelli melting chocolate wafers

How to Make a Fondant Bow

  • Lightly dust the surface with powdered sugar
  • Knead the fondant until it is soft and pliable. Dip the paintbrush into the powdered sugar.
  • Place the Wilton mat onto the surface and using the paintbrush, dust the bow mold.
  • Pinch off 1 ½ teaspoons worth of red fondant and push it into the bow mold.  Allow setting for 5 mins before removing. Make an additional 11 bows. Allow bows to sit overnight.

How to Make Chocolate Cupcakes

  • Preheat oven to 350 degrees. Line the cupcake pan with liners.
  • In a large bowl, add the flour, cocoa, baking powder, baking soda, and salt. Whisk until thoroughly combined.
  • In a separate bowl and using an electric hand or stand mixer, beat the brown sugar, sugar, canola oil, egg, and vanilla until combined.
  • Alternating between the buttermilk and flour, add to the bowl until the ingredients are combined and smooth.
  • Fill the cupcake liners about 2/3 full.
  • Bake for 21 minutes or until the top bounces back when touched.  Allow cooling completely before frosting.

How to Make Three-Colored Frosting

  • In a large bowl and using an electric hand or stand mixer, beat the butter and vanilla until light and fluffy, or about 2 minutes.
  • Add the heavy whipping cream and powdered sugar until smooth and fluffy, or about 2-3 minutes.
  • Scoop 1 cup of frosting into each of the 2 bowls. Add a few drops of the red food coloring to one and the green to the other. Mix well.
  • Prepare the 3 piping bags. Add red frosting to 1 piping bag, green frosting to the second, and white frosting to the third.
  • Starting with the red frosting, pipe a large ring around the top of one cupcake. Using the green frosting, pipe a slightly smaller ring on top of the red frosting. Next pipe a smaller ring of the white frosting on top of the green.
  • Place one Ghirardelli melting wafer on each side for the ‘Ears’ and place the red bow in the middle. Repeat for the other 11 cupcakes.

Notes for Making Minnie Mouse Christmas Cupcakes

  • For a more modern color combination, you can use dark blue, light blue, and white for your frosting.
  • Not sure if you should use gel or standard food coloring? A gel food color makes for a thicker frosting and a more vibrant color, which you have to use less product to achieve. Standard food coloring is water-based, so it will thin out your frosting as you need to use more to get the desired color.
  • If you cannot find the Ghirardelli melting wafers, you can replace them with mini chocolate cookies.
  • If you do not have powdered sugar for your frosting, you can use white granulated sugar. Just bear in mind the frosting will be a bit gritty.
