Tips for Making These Delicious and Easy Cupcakes

  1. If you want to cut back on the “sweet” in this recipe, cut the pudding mix in half and substitute half of the cream soda for a plain soda, milk, or heavy cream.
  2. For that “from scratch” taste in no time, substitute the dry ingredients like flour and baking powder in the recipe for a yellow cake mix. Be sure to add the required ingredients the boxed mix calls for.
  3. Either from scratch or from a box mix, these cupcakes are sweet, rich, and dense. Double up on the quality cupcake liners to lend a little extra support. They’ll look better and avoid any unsightly stains coming through.

  • Large eggs, room temperature
  • White granulated sugar
  • Salted butter, softened at room temperature
  • Vanilla extract
  • Brown sugar
  • All-purpose flour
  • Baking powder
  • Dry, instant butterscotch pudding
  • Cream soda
  • Powdered sugar
  • Butterscotch sauce

Notes on Baking Cupcakes

  1. Whenever you bake, always use an oven thermometer to get an accurate reading for your recipes. Even on a brand-new appliance, temperatures can vary and you don’t want an under or overcooked cupcake.
  2. Turn the pans mid-way through the baking process. I set my timer for 8-9 minutes, rotate the muffin pan 180 degrees, and then bake for an additional 7-8 minutes or until they are ready. Also, be sure to cool completely before trying to frost your cupcakes.
  3. When making any baked goods, use accurate measurements. Because most dessert recipes use a leavening agent like baking soda or baking powder, the chemical reaction between that and the other ingredients is crucial for proper rising. Changing an amount by just half a teaspoon could spell disaster for your recipe.

Butterbeer Cupcakes Recipe

This easy-to-make Butterbeer Cupcake recipe is the perfect snack for your Harry Potter movie night or add to your Hogwarts-themed dessert table.

Ingredients

  • 2 large eggs, room temperature
  • 1 cup white granulated sugar
  • 1 stick salted butter, room temperature
  • 1 teaspoon vanilla extract
  • 3 tablespoons brown sugar
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 (3.4 oz )package dry instant butterscotch pudding mix
  • 1 cup cream soda
  • 1 stick butter, room temperature
  • 2 tablespoons butterscotch sauce
  • 3 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups powdered confectioner’s sugar

Instructions

  1. Line a muffin pan with cupcake liners or spray with non-stick cooking spray. Preheat the oven to 350 degrees F.
  2. In a large mixing, add the softened butter and vanilla. Using an electric stand or hand mixer, beat together for 1-2 minutes or until fluffy.
  3. Mix in the eggs and granulated sugar until creamy. Next, mix in the brown sugar.
  4. In a small mixing bowl, sift the dry ingredients together.
  5. Add the dry ingredients to the large mixing bowl, alternating
    with the cream soda. Mix until just incorporated, but do not over-mix.
  6. Using an ice cream scoop, add batter to the lined muffin pan, filling each cavity 2/3 full. Bake for 15-17 minutes or until a toothpick comes out clean and the cupcakes spring back when touched. Allow cupcakes to cool completely (about an hour) before frosting.
  7. While the cupcakes are cooling, add the butter to a large mixing bowl. Using an electric hand or stand mixer, beat until creamy
    (about 2 minutes).
  8. Mix in the butterscotch sauce, brown sugar, and vanilla extract until combined.
  9. Mix in the powdered confectioner’s sugar, 1 cup at a time, until the mixture is smooth and creamy.
  10. Fill a prepared piping bag with the frosting and frost the cupcakes. Drizzle with the butterscotch sauce.
