Turkey and Hummus Pinwheel Sandwiches
Here at Ruffles an Rain Boots, I’ve been sharing easy pinwheel sandwich recipes for kids, quick lunches, and parties for years. There’s something about these quick-to-prep, pretty bites that draws people in.
These Mediterranean-inspired pinwheel sandwiches only take about 10 minutes to prepare and will be set up for serving in about an hour. This recipe makes 4 full sets of pinwheels for a party, but you can follow the adjustments below to make this for a lunch or snack.

Ingredients and Alternatives
I love preparing easy recipes, meaning I keep the “fancy items” to a minimum. I’ve included sun-dried tomatoes in this recipe but you could very easily replace them with fresh tomatoes or roasted peppers in a jar.
- tortillas (plain flour, spinach, or tomato are options)
- thin, deli turkey slices
- hummus (plain, roasted garlic, or sun-dried tomato will work)
- cucumber
- sun-dried tomatoes (dried or in oil)
You will also need a serrated knife and a bit of plastic wrap or foil. I find wrapping and setting the rolls helps them stay together better and keep their distinct pinwheel look.
How to Make Turkey and Hummus Pinwheels

Dice the cucumber and sun-dried tomatoes into small pieces. This will help to get them into each and every bite.

Lay out each tortilla and spread with hummus, dividing the hummus amongst all.
Add 4 slices of turkey meat to each tortilla, spreading them out evenly to all of the edges so when it is rolled, it is included in each bite.
Divide the diced cucumber and diced sun-dried tomatoes amongst the tortillas evenly, sprinkling them atop the hummus.

Roll each tortilla tightly into a log and secure each with plastic wrap. Refrigerate for about an hour to allow the flavors to marry and the roll to stiffen.
Remove the plastic wrap and cut each tortilla into 6 slices using a serrated knife. You can add a toothpick into each roll to make plating and serving easier.

These delicious turkey and hummus pinwheel sandwiches are an easy lunch or a pleasing appetizer. They only take about 10 minutes to assemble and can be made in advance for a party.
Ingredients
- 16 thin (or regular) deli-sliced turkey slices
- 4 large flour tortillas (see notes for substitutions and smaller servings)
- 8-10 ounces Hummus (see smaller serving size suggestion below)
- 1 Garden Cucumber (or 1.5 Persian), peeled and diced
- 2-3 ounces Sun-Dried Tomatoes (in oil or dried), diced
- Plastic Wrap or Foil, optional but recommended
- Small, Serrated Knife

Notes
These pinwheels can be made up to one hour in advance. They do not store well.
Tortilla Substitutions / Serving Size Adjustments:
- You can opt to swap the flour tortillas for spinach or even sun-dried tomato tortillas.
- If making for one, most of the time I use the Carb-Smart tortillas (fajita sized).
Hummus Substitutions / Serving Size Adjustments:
- If making for one, I will use one or two of the 2 oz, single-serving hummus packs.
- Swap the sun-dried tomatoes for a sun-dried hummus.
Sun-Dried Tomatoes
- If using tomatoes in oil, drain and pa dry before adding to the tortillas.
- If using dried tomatoes, you can reconstitute in warm water (30 minutes) or olive oil (overnight).
