Ingredients for This Orange Soda Cupcake Recipe
Below are the simple ingredients to make these fun summer cupcakes. Grab a cake mix and orange soda to get started!
For the cupcakes:
- Vanilla (or white) cake mix
- Eggs
- Oil
- Orange soda
- Orange flavored jello mix
For the frosting:
- Unsalted butter
- Powdered sugar
- Orange soda
- Orange jello mix
How to Make Cake Mix Orange Cupcakes with a Creamy Frosting
Start by preheating the oven to 350 degrees, and lining a muffin pan with orange paper liners.
Combine the cake mix, jello mix, eggs, oil, and soda in a large bowl or bowl of a stand mixer and beat on low speed just until the ingredients are combined. Once combined, beat for an additional 1-2 minutes on medium speed, scraping the sides often.
Divide the batter between 24 prepared tins, filling each liner about ½-⅔ full.
Transfer the pan(s) to the oven, and bake for 14-16 minutes or until the center is set, and a toothpick inserted into it comes out clean. Cool the cupcakes completely before frosting.
To prepare the frosting, combine the softened butter, powdered sugar, jello mix, and orange soda in a large bowl or bowl of a stand mixer and mix on low. Once the ingredients are combined, beat on medium speed until the texture is light and fluffy, scraping the sides often.
Add the frosting to a piping bag fitted with a large star tip and pipe frosting onto the cupcakes.
Finally, cut orange paper straws into thirds, and insert one into each cupcake.
