We have a rule here in the Ruffles and Rain Boots house – no sugary cereals for breakfast unless it’s Fridays. Why? Mom is usually interested in sipping on an extra cup of (hot) coffee instead of making breakfast.

This St Patrick’s day bark is a fun rainbow food idea, sure but let’s focus on what is important: it has Lucky Charms! It’s no secret Lucky Charms is one of the BEST cereals out there. It’s dessert in a bowl, friends. Marshmallows in bright fun colors and shapes?! Grab a handful (for fuel) and let’s get started.

Tips to Make Rainbow Bark

First, let me just say that it is perfectly normal to snack on Lucky Charms while making these. Perfectly normal. It’s a universal truth and don’t let anyone tell you otherwise.

  • Enlist the help of the kids to pick out the Lucky Charms pieces they want.
  • Sorting M&M’s is super fun but don’t stop there. Use Skittles if you have those on hand because really, the more the merrier!
  • If you have little ones helping, hand them a butter knife and the rainbow candy. Letting them cut strips or even shapes is good practice.
  • Work quickly, but savor the Lucky Charms. #lifelessons

St Patrick's Day Bark

This easy and colorful St. Patrick's Day bark is a fun way to get the kids involved in the holiday fun. Who doesn't love rainbow foods!?

Prep Time 15 minutes
Total Time 15 minutes

Ingredients

  • 1 1/2 cups white candy melts
  • 1/4 cup green candy melts
  • 1/4 cup light green candy melts
  • 1/4 cup yellow candy melts
  • Lucky Charms (we used the clover hats)
  • green M&Ms
  • rainbow sour strip candy
  • light and dark green sanding sugar
  • green sprinkles

Instructions

  1. Line a baking sheet with parchment paper. Set aside.
  2. Melt all colors of candy melts per package instructions and spread the white candy melts evenly on the parchment paper.
  3. Transfer the remaining candy melts to three separate zip-top bags and snip the corners. Use them to pipe clovers throughout the white candy. Layer some so you get depth.
  4. Cut the rainbow candy into 1-inch strips and distribute around the bark.
  5. Add sanding sugars and sprinkles all over the bark. Place candies on top.
