Easy Princess Anna Mickey Ears Cupcakes

Here at Ruffles and Rain Boots, we are all about the party in our house. The kiddo loves to celebrate something–anything, and I’m willing to oblige almost anytime. So, when she asked for a Frozen II party with friends at a playdate, we set to making these Princess Anna cupcakes.

Tips to Make Frozen Party Cupcakes

  • I love to start every cupcake ever with my Lazy Girl Cupcakes. They’re a simple no-fail cupcake recipe that I can make and know I’m not going to mess it up–even for a last minute birthday party. But, you do you. If you have a favorite cupcake recipe, use that. Or if you love a certain cake mix, use that. These are your Mickey Mouse cupcakes.
  • Don’t overfill your cupcake liners. You don’t want them spilling out while they’re baking and ruining the look.
  • If you don’t want to use fondant for the ears, you can use mini OREO cookies. They won’t be exactly the same as my cupcakes, but it might be one less thing you have to worry about.
  • I used a paintbrush to put all of the decorations on my Mickey ears for these cupcakes. It turns out that it was really simple. But if you’d rather, you can pipe the decorations on, with the exception of the gold luster dust–that will need a paintbrush or toothpick.

Princess Anna Mickey Ear Cupcakes

These easy Princess Anna Mickey ear cupcakes come together really quickly--and the ears look like they're hard to decorate, but they're really not!

Ingredients

  • 6 of Your Favorite Vanilla Cupcakes
  • 1 Can (3 cups) of Your Favorite Vanilla Frosting
  • Light Blue Food Coloring
  • Red Food Coloring
  • Black Food Coloring
  • Purple Food Coloring
  • Dark Blue Sprinkles
  • Purple Sprinkles
  • Black Fondant
  • Gold Edible Glitter (luster dust)

Instructions

  1. After you've baked your cupcakes, set them aside on a wire rack to cool completely. 
  2. With your largest decorating tip, cut a hole into the top of the cupcakes and fill with a small amount of dark blue sprinkles for a fun surprise.
  3. Replace the top of the holes in the cupcake.
  4. Start making the Mickey ears by rolling out the black fondant to about ⅛-inch thick on a sheet of parchment paper. You definitely want it to be thick, in this case, because you need it to stand up. So don't make your fondant thin.
  5. Cut out 24 rounds from the fondant. Pull the excess fondant away from the circles so they retain their shape.
  6. Set aside the black circles of fondant for a minimum of two hours to dry out--even better if you can leave them out overnight.
  7. When the fondant circles are dried out, make your blue icing by combining 5-10 drops of blue food coloring 1/2 of your icing and stir.
  8. Using a bit of this blue icing and a paint brush, paint the top of Anna’s dress in a “V” shape on each of the black fondant circles. 
  9. Combine about 3-5 drops of water with 1 teaspoon of edible glitter and, using a small paintbrush or a toothpick, paint the ears with swirls and outline the "V" shape like Anna’s dress bodice.
  10. Combine ½ teaspoon of icing with 2 drops of red, 1 drop of black and 1 drop of purple food coloring to make a deep burgundy color and paint little jewels on the center of the ears and in various other locations, as desired. photo collage tutorial of how to make princess anna cupcakes with mickey ears
  11. Allow the icing to crust over for about 10-15 minutes.
  12. Place 2/3 of the remaining white and all of the remaining blue icing into the decorating bag with your large star tip.
  13. Frost each of your cupcakes with approximately half of the icing you normally use.
  14. Add purple sprinkles on top of the swirled blue/white frosting of each cupcake.
  15. Tuck two of the Mickey ears into each cupcake, one on each side.
  16. Immediately place the cupcakes into your fridge for 15-20 minutes to set the blue/white icing and hold the ears in place.
