Healthy Peanut Butter Snack Balls

Here at Ruffles and Rain Boots, I am quite well known for living the better part of my 20s and early 30s surviving on two foods: popcorn and cookies. Before there was Carrie and “Sex in the City,”:

  • I stored boot boxes (with the boots in them) in my oven,
  • I put purses in my kitchen cabinets because I ran out of storage space in my closet(s),
  • and the refrigerator was empty most of the time.

Cooking, it is safe to say, was NOT my thing at the time. And, because this is a safe space, I think cooking really stinks. Eating is wicked amounts of fun and baking is a good time, but cooking? Not for me.

That means I gravitate to easy and quick snacks. Bonus points if they only have a few ingredients and that is exactly what these healthy peanut butter energy snacks are.

Kids in the Kitchen: Peanut Butter Energy Bites

My daughter, at just over 2 years old, and I took to the kitchen to make these tasty, healthy peanut butter snacks. She worked on forming balls (sort of like little hands working with play dough).

We made this recipe while I listened to a toddler bang out “row, row, row your boat” on pie tin cymbals, so it’s safe to say it’s an easy one to put together.

Healthy Peanut Butter Snacks Ingredients

  • 1 cup old-fashioned oats
  • 3 tablespoons peanut butter, plus more for consistency (we used creamy)
  • 1 teaspoon vanilla
  • 2 teaspoons – 1 tablespoon honey (start with 2 teaspoons)
  • optional: chocolate chips

Put the oats in a food processor (or chop by hand). You want them small so they form the balls easily.

Mix in the honey, vanilla, and peanut butter, adding more peanut butter if necessary. You’ll be able to tell if they’re too dry. These healthy peanut butter snacks should be a bit moist and slightly sticky – they need to hold together on their own.

Scoop out the mix and work in your hands to form into balls. We get about 14 peanut butter energy bites from this recipe.
