Healthy Peanut Butter Snack Balls
- I stored boot boxes (with boots in them, yes) in my oven,
- purses in my kitchen cabinets and
- the refrigerator was empty most of the time.
Cooking is not my thing but because this is a safe place, I’m going to be really honest: I think cooking stinks. Eating is wicked fun and baking is awesome, but cooking? Cooking isn’t my happy place.
So I tend to gravitate to easy and quick snacks. Bonus points are given if they only have a few ingredients and that’s exactly what these healthy peanut butter energy snacks are all about!
Kids in the Kitchen: Peanut Butter Energy Bites
Elise (28 months) and I took to the kitchen and made these tasty, healthy peanut butter snacks. She tried forming the balls, like a tasty form of edible play dough, but squishing the mixture in her fingers won out over any serious fine-motor building activity.
If I can {correctly} make this recipe in a few minutes while listening to a toddler bang out “Row, row, row your boat” on pie tin cymbals, you should have absolutely no reservations about trying it. And I promise there will be no need to ready the fire extinguisher.
Healthy Peanut Butter Snacks Recipe
- 1 cup old-fashioned oats
- 3 tablespoons peanut butter, plus more for consistency (we used creamy)
- 1 teaspoon vanilla
- 2 teaspoons – 1 tablespoon honey (start with 2 teaspoons)
- optional: chocolate chips
Put the oats in a food processor (or chop by hand). You want them small so they form the balls easily.
Mix in the honey, vanilla, and peanut butter, adding more peanut butter if necessary. You’ll be able to tell if they’re too dry. These healthy peanut butter snacks should be a bit moist and slightly sticky – they need to hold together on their own.
Scoop out the mix and work in your hands to form into balls. We get about 14 peanut butter energy bites from this recipe.
