Here at Ruffle and Rain Boots, I think muffins are the second most perfect thing (next to cupcakes, of course). Are they breakfast? Yes. A dessert? Yes. A snack? Yes. I don’t care when I can eat these muffins as long as I can. They’re just that good.

And the easy crumb topping recipe takes these over the top. Let’s make the best apple muffins with simple ingredients and simple steps because I’d rather be sipping coffee and eating these than writing.

Types of Apples to Use for Muffins

Baking apples are best in this recipe. When shopping for or picking apples, a few of the varieties I like to use are Gala, Braeburn, Granny Smith, and Honey Crisp (my favorite).

When cutting the apples for muffins, keep them chopped and not diced. We want to actually TASTE the apple pieces in these because of the chunky crumble topping.

How Do I Know When the Muffins are Done?

There are ways to tell that the muffins are done baking all the way: look at the top of the muffin. A golden brown coloring is the indication that the muffins are ready to enjoy.

You can also insert a clean toothpick into the center of the muffin. And honestly, I do this for EVERYTHING I bake. It’s the easiest way to check if the inside of the muffin is baked all the way. If the toothpick comes out clean, the muffins are done and ready to take out of the oven. And then I have to wait…

If You Want to Take These Fall Muffins Over the Edge…

Now this isn’t included in the recipe card below because it’s a bit “extra,” just like the included streusel recipe. If you want to WOW everyone, I got this tip from Robyn with Add a Pinch:

  • brown butter in a sauce pan
  • mix up a batch of cinnamon sugar (1/4 cup white, granulated sugar and 1 tablespoon ground cinnamon)
  • dip the tops of the muffin in the browned butter and then in the sugar topping

This recipe is an easy way to make warm and delicious fall muffins. Read through or print out the recipe below after reading the tips above. Note: I’m using a jumbo muffins but you can make “normal” ones in a muffin tin.

Ingredients

Muffin Ingredients

  • 2 cups All-Purpose Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 2 tsp Cinnamon
  • 1/2 cup Softened Butter
  • 1/2 cup Brown Sugar
  • 2 Eggs
  • 1/2 cup Greek Yogurt
  • 1 tsp Vanilla Extract
  • 2-3 Apples, cored and chopped

Streusel Topping Ingredients

  • 1/4 cup All-Purpose Flour
  • 1 tsp Cinnamon
  • 1 T White Sugar
  • 3 T Brown Sugar
  • 3 T Melted Butter

Instructions

  1. Preheat the oven to 400F and add muffin liners to your muffin pans. Set aside. I'm making 6 jumbo muffins, but you can make regular, as well. Ingredients needed for a fall muffin recipe with apples, cinnamon, and a crumb topping.
  2. Starting on the muffins, whisk the baking powder, salt, all-purpose flour, baking soda, and cinnamon then set aside. Dry ingredients for apple muffins shown in glass bowl on white counter.
  3. Grab a big bowl and beat the butter and brown sugar together until fluffy (will take a couple of minutes). Butter and brown sugar combined thoroughly in glass mixing bowl on white counter.
