5 Minute Dixie Cup Popsicles

I just love it when Elise wants to get into the kitchen. At 3.5 years old, it’s not like she can whip up dinner on her own, but the teaching opportunities are wonderful. We cover math (measuring), have discussions on texture and chemistry, and safety. She is also really interested in following the recipes and repeatedly sings out, “What’s next!?”

In all honesty, I can’t wait until she is old enough to make dinner by herself. I really like the idea of getting kids in charge of dinner one night a week when they are old enough. Do you have your kids do this? Tell me, what age did you start having them prepare a meal?

Dixie Cup Popsicles by Ruffles and Rain Boots

We were reading a back issue of Highlights magazine and the little one asked to make some yogurt popsicles they shared. After altering it a bit, we came up with some really tasty (and just a bit healthier) treats to knock a sweet tooth down a peg or two.

Ingredients for Dixie Cup Popsicles

  • 1/2 cup plus 3 tablespoons plain Greek yogurt
  • 1 small organic banana, 1/2 sliced, 1/2 mashed
  • 3-4 small organic strawberries, mashed
  • 1 small organic kiwi, mashed
  • 4 Dixie cups (or other small paper cups)
  • 4 Popsicle or craft sticks

How to Make Dixie Cup Popsicles

Step 1. Cut 1/2 inch slices of the banana – one for every cup you’re making – and place a banana slice in the cup, flat.

Step 2. Push a popsicle stick into the banana slice slowly so that the stick stands up on its own.

Step 3. Mash or dice the strawberries, kiwi, and the remaining banana and mix in with the yogurt.

Step 4. Fill the cups with the yogurt and fruit mixture and bang them on the counter a few times to release the air bubbles. This might have been Elise’s favorite part!

Put the cups on a tray and freeze them for a few hours. Peel off the Dixie cup (ours came right off with no problem).

  2. Very cool! My daughter said she wants me to make them, but also dip them in rainbow sprinkles. Ha! She’s missing the point, I think, but they look fun and easy.
