Smoothies ARE a Culinary Skill… Right?

I can make a mean smoothie – the popular blood orange green smoothie is still going strong in our house 5 years after I whipped it up for the first time. Now I know all of the “real” cooks out there are thinking, “that is not a culinary skill.

Now, if you’ve ever tried making popsicles or smoothie-sicles, you know that it’s a pain to get them OUT! I’ve been tricked into buying pop maker after pop maker – and I was even cut once by breaking plastic – so I was apprehensive to try.

Smoothie Pops

When I want to make the pops, use the recipe below (or any other) and add a bit more coconut water. You don’t need much to extend the recipe (maybe 1/3 of a cup) and it works just fine for an additional 3-6 of these little pops. Psst: that’s a great feature of these pop makers – you can separate them for easy storage or if you only want to make a few pops.

TO make the smoothie, add all of the ingredients in a blender. Select a low speed to start (on Vitamix, I choose 2) until all large chunks are incorporated. Then, turn it up and blend until smooth.

  • 1/2 c frozen (or fresh) organic blueberries
  • 1 small banana
  • 1/2 c organic Greek yogurt
  • 1/2 – 1 c non-flavored coconut water (can use water; use more if you want leftovers to make pops)
  • 1/2 c organic reduced-fat milk (or substitute)
  • 2 handfuls of spinach (or kale)
  • 1 tbsp chia seeds
  • 1/2 – 1 tbsp of honey (optional, if your kids need sweetness to cut the greens)
