Fun St Patrick’s Day Food – The Good, The Colorful, The Not-So-Minty

Elise (26 months) loves to “help out” in the kitchen. Although I’m nervous about her being there, she gets such a kick out of stirring, whisking, and helping to measure. 

 
She recently busted out with, “Please let Elise help mommy cooks the good stuff.” Saying that while throwing out looks of cuteness that would top a chart if there were one to measure them, how could I not let her help? 

We definitely got into the spirit for the holiday with our decorations, but I thought we could include meal time in the fray. Jeff had to travel for work, so we had our holiday fun a bit early.

It was a lot of fun whipping up these colorful pancakes! The batter was so pretty and it only took a couple of drops of food coloring to get them into their rainbow-esque hues. 

Elise is a big fan of stirring, so whenever I make pancakes she gets to be right there with me. Jeff usually entertains her when I move to the cooking bit because these mini pancakes cook up in no time at all.

As you can imagine, we have a lot of mini pancakes left and they freeze very well. I pop them into a pan or just warm them up in the toaster oven for a quick, easy part of her breakfast.

This was an easy way to incorporate green into our lunch and limit carbohydrates at the same time. You know, ‘cuz if I save those carbs for popcorn later, then I’m totally eating healthy, right? ~wink~

We make a “healthier” version of egg salad with Greek yogurt substituted for most of the mayonnaise and I must say that it is very, very tasty. 

Elise has always eaten the egg salad, but I think the cucumber boats just made it a bit more fun. Served with a side of mini dill pickles, her new favorite food, she gobbled up lunch in no time.

Ah, the pièce de rĂ©sistance of the St. Patrick’s Day food-a-thon had to be when the family shared a homemade shamrock shake. 

Well, it was almost a shamrock shake.

It would have been one if shamrock shakes were made with frozen Greek yogurt. And vanilla instead of mint. I only had peppermint oil, not peppermint extract, and it’s totally not the same. 

I get confused with what’s on hand in that big, scary room with all the food burning cooking appliances. 

It tasted divine, however, and it was green so it totally counts as a shamrock shake to me. Besides, Elise is two and doesn’t know what a real shamrock shake tastes like, so I have that going for me. 

If you want to make ours, here’s a rough guide for a recipe. I wasn’t really measuring, so this is my best guess.

 

Healthier Shamrock Shake (makes one small shake)
  • 3/4 c organic non fat frozen greek yogurt (we used honey flavored because it’s what we had)
  • 1/4 c organic reduced fat milk
  • 1/2 tsp organic vanilla extract (could use peppermint extract to make it a traditional shamrock shake)
  • a couple drops of green food coloring
  • cool whip – if you want. I wanted.
  • green sugar sprinkles – if you want. Elise wanted.
